Here at the Lab we have a great admiration for Mark Bitman, also known as the Minimalist for his column of the same name at the New York Times. If you’re not a fan, you’re about to become one if you’re still fretting over what to serve at Thanksgiving.

He recently put out a set of 100 quick, make-ahead recipes for everything from chutneys and relishes to soups, stuffings, grains, vegetable side dishes, salads, breads, crackers and desserts.

While these dishes certainly have a holiday flair, there are plenty of great options for everyday dinners, too, like the Greek wild rice salad, spiced muffins and cranberry polenta cakes. Yum.

Try to remember it’s just one meal

Thanksgiving is a notorious day when it comes to overeating, regardless of how good we tell ourselves we’re going to be beforehand. And that day (or long weekend) of eating too much all too easily spills over into the next weeks so that by January 1, we’re all about ready to starve ourselves if it would help undo the damage.

It’s important for us all to remember that Thanksgiving dinner is, in fact, just one meal and we’re allowed to make less-than-healthy choices once, so long as on balance we’re staying healthy through the holiday season.

This is no time to diet, experts say, but you can and should focus on maintaining your current weight through the holiday season. Try to get some exercise at least a few days a week, particularly when you know you’ve got a holiday party coming that you’ll want to indulge at (if you go to a ton of parties, you should be willing to eat healthier at some of them).

Remember that one decision does not a blown diet make, but a whole season of bad decisions can set you up for a not very happy New Year.
